It sounds like there was not enough "heat" to remove from the air so the refrigerant was just getting colder and colder until it froze. It seems like 78 would be okay, but I know enough about HVAC to make some poor assumptions and royal jack things up.
You mentioned that it wasn't very hot, but it was sticky. That leads me to believe there was not enough of a "heat load" in the house to prevent the lines from freezing over. If it were hotter, this might not have happened. Probably no big deal, just tough it out next time.
I love my 05! It is the most comfortable, solidly built car I've owned. It drives great, has more than enough power and is a monster in the snow. The only thing I want for it is the A-Spec kit.
